Saganaki
Otherwise known as flaming cheese. This is a Greek foodie favorite. Kasseri cheese coated with brandy and lit on fire at your table. You will be yelling OPA as the flames rise and are doused with fresh squeezed lemon.

A little history on this dish: The name saganaki comes from the Turkish word "sahan", which means "copper dish", according to Britannica. According to Chicago Magazine, while the actual cheese, saganaki, was invented way before, the chef described in this article takes credit for the actual flaming of the cheese.

Pastitsio
This is a very popular food in Greece. Long macaroni noodles layered with well seasoned lean ground beef with a touch of cinnamon, another layer of noodles topped with a white creamy bechamel sauce and melted cheddar cheese.

A little history on this dish:
According to Saveaur, the French-trained Greek chef Nikolaos Tselementes invented this dish.

Spanakopita
(Spinach pita) A mouth watering favorite, it combines chopped spinach, three cheeses, and Greek seasonings between many layers of fillo dough sheets. You will crave this item time and time again.

A little history on this dish:
According to Greek on Wheels, it is speculated that this famous dish originated in Greece over 400 years ago.

Avgolemono
This is the best of Greece. Chicken, orzo noodles, egg, veggies, and lots of lemon. Feeling under the weather? This is what the Greek women give their kids to make them feel better.

A little history on this dish:
"Avgolemono soup is a Greco-Turkish-Arab dish that was spread mainly by Sephardic Jews, who supposedly brought lemons from Southern Europe to Italy then to Greece in about the early 1000 A.D." Source: http://citedatthecrossroads.net/ids336f16/2016/12/14/avgolemono-soup/
